One Health: Food Safety and Security

This is a collaborative course offered by the University of Maryland (UMD) and Cairo University (CU) in Cairo, Egypt, to investigate One Health and its application to improving international food safety and security. Participants in this global (undergraduate and graduate) class will learn about One Health and how its application can improve global food safety and security.

Course Details

This is a collaborative course offered by the University of Maryland and Cairo University, Egypt, that will look at the One Health concept and how it can be used to improve international food security. One Health is a multidisciplinary approach that works locally, nationally, and globally to achieve optimal health for people, animals, and the environment. The purpose of this global class is to share knowledge about One Health and how its application can improve global food security and safety. How You'll Learn and Work

This is a Global Classrooms Signature Course.  The magnitude and complexity of food safety and security challenges today requires that scientists, researchers, and others look beyond their own disciplines, professions, and mindsets.  Participants in this global (undergraduate and graduate) class will learn about One Health and how its application can improve complex global food safety and security challenges. The course uses a project-based approach to offer students a) International Collaboration and Cross-cultural Competency: Students will engage with peers and experts from different cultural backgrounds, fostering a rich learning environment and expanding their global networks; b) Hands-On Experience: Students will use projects and case studies to apply theoretical knowledge to real-world scenarios under the guidance of experienced instructors; and C) Career Opportunities: Students will gain valuable skills and insights by working with international stakeholders actively involved in food safety and security interventions.  The synchronous class meeting times are: Mondays, 10am-12pm EST or 4pm-6pm Egyptian Time; Wednesdays 10am-12pm EST or 4pm-6pm Egyptian Time.

Although there is no required minimum attendance, success in the course is dependent on collaboration among all students as well as class discussion and participation.

Prerequisites & Restrictions

This course is open to any graduate or senior undergraduate student who is interested to learn about risk assessment, food safety and food security.

MIEH407 students must have earned at least 75 credits.

Course costs should be calculated based on the university’s standard tuition and fees for undergraduate students and graduate students.
